I disagree. If that were the case, the conversation about Notorious B.I.G. potentially becoming infected by the mold won't make sense—the answer would just be that it won't be infected, because it's a stand. But that's not what Cioccolata says.
I think it makes more sense to assume Cioccolata has some control over exempting himself or his allies from being infected by the mold. Either way, what you said and my suggestion are both just fan theories; neither are actually confirmed by the author (although if you want to cite some canon art book then be my guest).

This is my understanding of what happened to Bruno;
By the time Giorno got to Bruno at the church, he was already dead, and thus an inanimate object. Giorno's power to give life to inanimate things activated and allowed Bruno's soul to enter the body as it was animated. Bruno, as he is now, is just like any other creature animated through Giorno's ability, if Giorno were to die or release his power, Bruno would immediately go back to being just a normal dead body.
At least that's how I understand it.
Food for thought: What would happen to everyone's body parts Giorno made for them if he were to die?
