Think of Joseph was doing what Lisa Lisa did when he was in his early 50's but late 50's he started aging again because he had more things to worry about than practicing hamon (DIO, Josuke, and Holly). He didn't feel the need to have hamon after because DIO was dead, so he aged normally.

2020-08-27 21:04:12 +0000 UTCJust an fyi for later on in this part but in the manga, Jotaro says he brought Joseph to find Chili Pepper cause Hermit Purple is able to travel through electricity as well and could find him that way. Joseph's spirit photos were implied to have gotten less accurate with age that's why he kept getting pics of Angelo instead of his own son.

Joseph himself mentioned in part 2 that he hates hard work and he had stopped training his hamon after defeating the pillar men, unlike Lisa Lisa, who dedicated her entire life to hamon training. It would only make sense that Joseph aged like a normal person.
