The nurse, Ju Yean, pulled Jae-il away from Da-hye, who was scolding him, and eased Da-hye’s anger.
However, Nam-kyung, who was outside, misunderstood the situation. So, following what Myeong-eun-won had told her, she bullied the nurse.
The I/O check every two hours means that the amount of fluid and the amount of urine should be checked every two hours. The nurse has no choice but to do it because the doctor ordered it. Namkyung harassed the nurse. (I heard that, in reality, doctors sometimes bully nurses with I/O check orders. classic bullying) That's why the nurse timidly took revenge at the end.
Nurses know all different styles because many professors have worked since they were residents. So it can be of great help to doctors who are residents now. There is nothing good about a residents have issues with nurse.

Thank you for continuing with Resident Playbook. I was worried you had dropped it. The reason Nam-kyung became bitchy towards Nurse Ju-yeon was that she overheard her telling Jae-il he was at fault when Da-hye was scolding him. She only overheard the conversation without realizing that Nurse Ju-yeon was in fact helping Jae-il. Nam-kyung thought the nurse was being condescending towards Jae-il. Myeong Eun-won had already poisoned her mind against the nurses. So Nam-kyung took it upon herself to get back at Nurse Ju-yeon for "mistreating" Jae-il.
That bit at the end was just Ju-yeon getting back one time at Nam-kyung for everything she was put through during the day. Ju-yeon is a very good nurse and she is not evil. In fact all the nurses are good.
BTW Jun-wan does have a sister - at least one sister. She did not appear in Hospital Playlist but they talked about her once her twice. She was an aspiring actress and Jun-wan once complained about her changing her name in hopes of finding success as an actress. As for Professor Seo, she was apparently a classmate of our '99ers when they were in medical school.
