It’s no longer the name for a bastard, it’s the name of the greatest warrior in the seven kingdoms. He’s changing the way people see bastards because he is a King amongst men. Snow, Sand, Stone, Rivers, etc. no longer holds the stigma it did a decade ago, solely because of Jon Snow. What name could he chose that would hold more weight than him using the one he’s known as and celebrated for?

I get why Jon isn’t concerned with being snow himself but when he became a lord why he didn’t just create a house name I will never understand. His wife and now his kids will be named snow. It’s one thing to take on the bullshit on yourself because you don’t care it’s another to curse your wife and future children with bullshit because you don’t care.
