Hi John, I didn't know either but found the reason why you eat unagi on the 18th day before the Lixia (立夏「りっか」) which is known as 土用の丑の日「どようのうしのひ」. Basically it's the changing of the season and to keep your stamina and health up, you eat unagi (based on a poem in the Man'yōshū (万葉集「まんようしゅう」). More info here. https://shikinobi.com/doyounoushinohi
