In the US, owning the bird parts in and of itself is illegal, not just killing/possessing the bird. I didn't know it was technically legal in Canada!

so i'm a chemistry PhD student, i work at the university with all sorts of weirdos (myself included). a while back we had an incident that the whole institute was talking about, which was this: a member of another research group had found a dead bird outside our building, reports differ on what type of bird it was, but allegedly it was approximately dove-sized. he as well wanted to get the bones, and he read somewhere that you could dissolve the flesh and all from the bones using potassium hydroxide. he thought it would be a great idea to do this in his lab next to his research stuff. unfortunately he fucked up the amounts, used way too much KOH and ended up with only black soup, everything dissolved. he then flushed the yucky soup down the drain, saying "it's not so different from drain cleaner" (which i'd say is only partially true). his superior was, let's say, not amused, and it was for sure the story of the month at work
