The case of Jaime is a little bit more complicated. The books indicate that he had a sense of honour back then, before he killed the king. Not necessarily something like our modern morality that is based on compassion and pity, but rather on honour, valour, glory, bravery - knightly values in general. But with the case of the Mad King he was forced to choose between 2 knightly duties: protecting the innocent vs serving his lord. He choose the former and was universally despised by everyone for doing that. It is heavily indicated that this changed him. Convinced him that ethics are bullshit, and hypocritical and he became a moral nihilist.
I would not necessarily call him my "favorite" character (Like in a sense someone you could look up to), but I would definetly call him the character that I find the most interesting in the show.

Yeah this was the moment where a lot of people started to understand Jaime. Sure he's done a lot of bad shit but, he became one of my favourite characters here. :D
