In the web novel, Ainz couldn't really go out and do stuff himself so he was limited in what he could do, so when the time came to stream line the original web novel into the light novel, the Creator added Albedo and her two sisters. Albedo is the leader of the guardians so that she can run the tomb and Ainz can actually be a part of The New World. But yeah, she also simps for Bone Daddy as well.
