From the Desk of Dr Toni Lodge #040

Welcome to blog 40, and episode #11 of A,Blog,C’s! The blog where I write about the first word that comes into my brain based on this weeks’ letter!

Today we’re working with the letter K.

Immediately I thought of a Kraft Cheese Single. Do they have these in places other than Australia?

Odd. It’s like that plastic cheese with the wrapping that makes a SUPER satisfying noise as you peel the plastic back.

In Australia we also have Kraft Mac and Cheese (I assume they have that everywhere) but there’s two types:

This is the yum one. Easy Mac - it’s a hard macaroni with a delicious orange powder sachet full of salt and MSG and fake cheese and you mix it with water and pop it in the microwave. I have fond memories of burning my hand on a bowl taking it out of the microwave after school. 

Then there’s this one. That like - has a cat food tin full of plastic cheese in it which is ‘sauce’. Taubs and I argue over this a lot… But this tastes like fucking dick hole.

There is NO match for mac and cheese from scratch in my opinion!

I don’t have a recipe - but it ends up a little something like…

A packet of macaroni

Red leicester cheese, pepper jack cheese, gruyere cheese (a big handful or so of each - do not buy pre-grated, grate yourself!)

Flour, milk, parmesan, paprika and butter for beschamel

Panko breadcrumbs

Make ya besch from scratch and melt in the parmesan and half of each cheese

Boil ya pasta

Mix your besch and pasta into each other and add *almost* the rest of each cheese

Pour half of your saucy pasta into a dish, do a sprinkle of panko across the top

Pour rest of your saucy pasta and a good sprinkle of panko across the top

Finish with the rest of your cheese

If it’s still hot I reckon just chuck her under the grill to crust up the top - if you make it before you’re ready to each, pop it in the oven for a while to heat back up and crank up the grill at the end
