You can chose to fire or not after aiming a gun at someone, but poisons cannot be 'taken back' at the last minute. Poisons also don't stop after they kill the target, and can kill unintended victims if they sample the wrong item. Poisons were the 'unexploded land mines' of the pre-industrial era.
