Water hammer: flowing water can have a lot of momentum, so if a valve in a pipe of flowing water is shut off quickly, the water pressure spikes momentarily. The name comes from the idea of the water slamming into the valve like a hammer, but it causes the pressure to go up throughout the whole system. If you run a faucet in your house and quickly shut the water off, you will sometimes hear a thunk somewhere else in your home, but be aware that doing that is really bad for your plumbing.
