I suppose you could pledge your service to anyone but there isn't much glory or honor in serving a blacksmith or an inn keeper. And this oath is not taken lightly. If Brienne just decides to leave Lady Stark's service next month it would impugn her honor.
And yes by Hot Pie logic Brienne has armor and is therefore a knight. She fought in The Battle of Renly's tent.

I liked Renly but I dont he would have made a good king, he was not strong enough cuz remember he was kinda manipulated by Loras Tyrel making think he should be king when he "Renly" admitted that he could not stand the sight of blood.
