As someone with dance experience, I usually watch the choreo casually first. Like singing, dance tells a story and many times the choreo is actually created based on the lyrics and intended feeling. I watch what they are doing and pay attention to how it makes me feel. If they want you to look at a certain spot, they will direct your attention that way (aka: Suga rapping in Fake Love. He moved across the screen from right to left and the members also did a chain effect choreo moving with him). Focusing on center is good if the person that's rapping or singing is in center, but in dance it can get really boring if everything happens in center. It's like repeating the chorus over and over without ever hearing the verse, prechorus, or bridge. So to add texture, movement, and keep things visually interesting and engaging, you will see the person singing or rapping will always start in different places, but they will usually direct your attention there first. I do usually go back and watch it a few times more so I can focus on each member, what they are doing, and how it contributes to the feel of song, but usually when I start I just want to get an understanding of the story, so I let them lead me.

The natural focus will be on the person center. This is why the center person is usually the one singing/rapping.

You can focus on the middle then if you want you can rewatch it as much as you like to focus on the group as a whole and the members and as armys we tend to rewatch every content multiple times and indefinitely lol if you watch each member separately, you will notice things you haven’t noticed before! Tbh, being a JM biased, my eyes always gravitate towards him and I tend to focus on him extensively, I just love the way he moves. You can simply watch any content multiple times or choose the approach that suits you best depending on your preferences and time :)

When I watch for the first time I always focus on the middle cause they keep rotating the members and you get the full choreography’s flavor but BTS puts a lot of gems in their choreo members all do their own little moves within the choreo which you will miss if you don’t focus only on them so ARMYs always watch 7 times more for each member

The best way is to rewatch it over and over every day for weeks lol 🤣 for me personally I never really paid attention to choreo before kpop. Now I'm completely enamoured with dance. The lines they make together, the symmetry, the shapes they make. I learned that most kpop choreographer's go as far as to incorporate the lyrics in the dance. I've seen so many anime references too, also Tik Tok dances make their way into them as well but for the most part I've learned to consider the dance part of the story they're telling with their music. (Especially lore heavy groups like BTS, txt, Enhypen, &Team, aespa, ateez , or P1harmony) I've even become more fascinated with acting because of the expressions people make while dancing.
