I actually do like the idea spring boarding off one possible movie script to do a more full length over a various openings of new movies. And honestly I want to throw my hat in the ring with that because though I do like some of your ideas like having Ghost's father Egghead's forces as the big threat of Ant Man 3 and Cassie Lang taking on a Ronin esque role i do feel there would be some differences. Especially since thinking about it, this is going with the idea of Zooey Deschanel playing Hope Van Dyne so... yeah that would totally change the character so I think we need to bring that up before talking about the rest of the Saga.
Now technically Abby Ryder Fortson actually WOULDN'T be Cassie Lang in this what if because the idea is "this is for the Ant Man that would have come out in 2010" (let's say it took a July 2010 release so we aren't missing Iron Man 2 and like Ant man and the Wasp comes out February 2015 so Age of Ultron would still be the May 2015 ender of phase 2) and yeah Abby would have only been... what 1 when that was filming so couldn't really have her there as kid Cassie but we can still use that template and the rest of the cast we can say stayed the same. However as you pointed out here AND in the Avengers Fanscription, the Hope Van Dyne Wasp was going to be played by Zooey Deschanel. Which means quite honestly the character WOULD be a lot different then how she's portrayed by Evangeline Lily. We don't know how much considering we don't have those Ant Man scripts but honestly I feel Edgar Wright and even Joss Whedon would want to play up to Zooey's strengths more. So I imagine she wouldn't be the more serious no nonsense and more bitter Hope (which Lily does play well but honestly would be nice having more variety in the love interest and female characters in the MCU then the "eye rolling not quippy stern female" character we saw more in the first two phases) and instead would actually play a more general flighty high energy and peppy put more happy and positive take on the character. Like the Wasp in the original comics was a bit like that but I wouldn't have her super guy and fashion obsessed as Janet was in like the 60's run but not just make her the spitfire you got in Earth's Mightiest heroes either. She is more generally well meaning but can be easily distracted and in her own world which IMHO actually not only gives Hank more a reason not to want her to become the new Wasp (since besides losing Janet also feeling Hope wouldn't be up for it) but also give her a little arc to overcome of her own. And it's connecting with Scott and getting a bit more serious that does ground her letting her suit up in Avengers to become a hero. Though still having a manic side that pops up over certain things but get to that later.
First though in Ant Man and the Wasp I wouldn't have it that even for altruistic reasoning that Scott would be tempted by a life of crime by Sonny Birch to create some tension between the Pims and him in the sequel. I do agree you need character tension but IMHO it wouldn't really make sense for Scott to be too prideful to ask like Tony for money especially if it was for his daughter's sake. I would still have Cassie sick and that Scott's arc in the movie be about being there for his daughter but a big subplot and runner of the movie is Scott trying to get there to be with his daughter for her operation but is constantly being distracted and pulled into other scenarios because of the quantum entanglement with Janet with Hank and Hope trying to get Scott to help them get her out of the Quantum realm. And it's Scott trying to hasten up the whole exchanges just to be there with his daughter that causes friction on his side with the Pyms and on their side (mostly again with Hank) when him trying to rush things alerts everyone of the lab that's still gone after by Birch and Ghost. And also having a scene with Hope admitting the reason why she's still more carefree and positive is admitting of that being a tribute to Janet of not wanting to grow up bitter like she knows her dad did but also fearful even with that if after everything that happened they could be a family again and Scott reassuring her. I would still have Ant Man and Wasp still carefree and fun (as that to me is a big part of the charm with Ant Man it's one of the less serious in terms of stakes and drama of the MCU film franchises) but again you do need some drama and stakes to ground thing and feel those would. Also though throughout people ask Scott or others how exactly he is paying for the surgery you have that addressed at the end or mid credits it was by Tony. And yeah have that talk with Hank and Tony except here it's more Tony asking about the Ultron schematics having read info on the project that he is trying to give up being a super hero for Pepper's sake (connecting more with Iron Man 3 which Age of Ultron should have done more but didn't) which Hank can at least relate to but still wouldn't help program him but have Tony hint at knowing someone who could.
And yeah I really like the idea you had of "Science Sibs" for Age of Ultron to have Tony Bruce and Hope being super into sceince and creation and working on Ultron together. I feel like Tony and Hope would actually have a weird connection because here Hope would be this really off beat and super quirky and still a bit of a spacy scientist but would be at such a high level most people wouldn't really get her but Tony would be one of the few and they have actually really strong bond. That yeah Hope as the heart of the team would have with everyone else but like it makes sense with the others (Cap understands the purity, Thor the awe of the world, Bruce let's face it just needs more positive people in his live) but does weirdly gel with them. As they would be in a sense the "co parents" of this version of Ultron with Hope having thought she would find something of her dad's coding (as yeah he wouldn't be for this but again her being positive would be) to turn Ultron into this super world protector and yeah that obviously goes awry so she like Tony also heavily blames herself for his actions. Which would especially be spelled out when she gets taken by Ultron pointing out his big grand amibtion with Skoovia actually parallels something she said earlier in the movie albeit in the most horrible literal sort of way and him taking her as he wanted the Wasp to see his new world. And yeah the Avengers like before stop it (and yeah if you're going to off Quicksilver that makes sense as a way to do it with Scott's regulator having issues) but with that heavy cost and yeah it's also that guilt and again friendship with Tony that puts her on his side in Civil War. I feel like seeing Scott get hurt (since you know it does feel off in Civil War we never had a scene between Ant man and Spider Man trading barbs so add that. Oh and one with Hope and Peter as they're still the most excitable about what's happening so that'd be funny) and knowing Steve's pure intentions during that big skirmish would yeah be what she needs to switch sides.
With "Quantumania" I would again connect more that themes of broken families and how some you should stick more with but others you should break if they are causing more trouble. Like the reason that Scott and Hope are on the run is yeah to protect Cassie (and yeah the Pyms as well who are more retired from the hero life at this point) but it should be about everyone being on the same page on whether or not they want to remain together and you know actually DO something about it. Thinking about it if we're not going with the whole house arrest story then shouldn't Scott and the Pyms be doing something to like over turn the effects of the Skoovia accords at least for Cassie's sake so Scott and hope (along with Maggie Lang and her husband Bill) could be a regular family again? Like maybe though Scott and Hope have to go on the run again at the end of the movie again like that's something the Pyms with Cassie looks into as Cassie starts HER hero training now fully committed to being a hero like her dad and the people she looks up to most? And yeah still have Infinity War play out mostly the same (though yeah funny scene with Hope annoying but also able to keep on the same intelligence level as Shuri as I think that would be funny) with yeah Scott disappearing into the Quantum Realm and yeah Hope frantically trying to get him back especially knowing her parents were taken because of the Snap and wanting to fix something. And when she gets Scott back have a scene of her still annoyed by her failures like allowing Cassie to slip into such a funk not knowing how to be a proper mentor or get her to be secure thus yeah more reason why she's fine making the sacrifice in the end and yeah have Cassie be new Wasp in ending battle honor that.
Again a fair amount of changes because yeah thinking of the new kind of Wasp you'd want to impiment that in the story but still like a lot of your changes here too.
