A (Good News!) Update About This Patreon

I have an update for all of you and about Patreon in general - it’s good news, don’t worry! First of all: thank you! Your support continues to be incredible, allowing us to make things which we’re proud of and which we hope you enjoy.

The Patreon was started to fund reviews and to keep us independent. Your generosity has provided us with incredible opportunities. I simply couldn't spend that much money every month on equipment to review. So it felt inappropriate to keep talking about Patreon on the channel, when there wasn’t a need for it for additional support.

The extra funds have allowed us to invest in better testing equipment, in things like a particle size analyser and (very recently) bringing on a new team member to help with testing. They have also allowed us to do something we love: experiment with the kinds of videos we make.

Earlier this year, we made a video that I’ve been wanting to make for years: What Does A Great Cup of Coffee Taste Like?

This was an expensive and challenging production which was only possible through the support you gave the channel. We’re all very proud of the video, and very grateful that you made it possible.

We’d like to continue to make new and different styles of projects. Many of which are resource-heavy (I know I should just say “expensive”, but this is a British problem...). We could get sponsors for those videos, but for many of them I simply don’t want that to be a part of the final video. So we’re going to talk about the Patreon a bit more on the channel again.

We won’t stop making reviews, but we will use the resources to help make experimental projects.

Historically, I’ve been reluctant to talk about our productions before they’re done, but now we feel we should be sharing more about it to bring you on the journey of the productions. Here's a sampling:

These projects will come with more BTS, and with more regular updates from me and the team.

Also - it’s been too long since I asked you what you want to see! As much as I’m excited by all of the ideas we have (and there’s a lot of them), what you want matters too. Be it brew guides, explainers, histories or anything really! A lot of you are probably waiting to see a bunch of videos about coffee production at origin. This is definitely something want to do, but it requires more time in blocks than I'm able to manage with my various commitments. However, this is a challenge i intend to overcome!

Would be lovely to get a video about making bigger batches of coffee at once for pourover. I know there's a video out there that has tips for making coffee for bigger groups, but I'm talking about having a small gathering of 2-4 people. How to do pourover for 2-4 cups of coffee, how to change the grind, how to change the parameters so you get a well extracted, lovely tasting cups of coffee for everyone!

Maybe do a video on the increasing silliness of tasting notes. I know they are important to get beyond “medium “ or “dark” but they are now getting so into the weeds (tastes like freshly toasted 12 grain bread with a hint of kosher Somalian goats cheese) that they fail to do their thing. It'd be extremely interesting to see coffee equipment over time (and short explanations of how they worked). There have been some very interesting coffee developments in the last two decades, but vintage coffee tools made strides throughout the centuries as well!

I do have a Synchronika which is wonderful and as you said, water and beans/grinders/burrs are key to get it right for espresso. In my opinion, more of those 3 ambits including the last equipments (Orbit, MC6, etc.) and last on water chemistry would be great. Thanks!

What are the considerations for beans, how could you grind them, what brew methods would even work, how you get the brewed coffee into a cup, what to do with spent grounds? etc. Would make an interesting video with the Polaris Programme or similar 😉

A question I'd love answering from a purely personal perspective, as it won't affect many people - but I've almost totally lost my sense of smell due to medical issues. I know with food there are some flavours that are heavily picked up via smell (e.g. vanilla), but are there any particular notes/flavours within coffee that are picked up less by the olfactory system than via taste? As in - what flavours am I more likely to get a more complete flavour profile from? Thanks!

Literally just joined to ask you, I think there is an interesting book, PhD or maybe a James Hoffman video to be made about a pretty specific subject: why does Australia's coffee culture almost entirely shun drip coffee? The answer Wikipedia gives is simply "we had a lot of Italian migrants who brought over espresso machines", but that answer feels VERY shallow. It can't be that simple? I think there's only one person for this investingative job and it's you, James!

If you still travel a lot for coffee expos and so on, it would be very interesting to see some videos about the history of coffee in a country you visit and maybe even go into detail about a coffee drink unique to that country. For example, Vietnam and the egg coffee, Japan and the kissaten culture and their strong brew ratios, or Australia or New Zealand and the flat white.

Hey, I love what you’re doing and appreciate every type of video you and your team come up with. As for Ideas, I would love more silly videos from time to time (like the bripe, the makita coffee maker, the ikea/aliexpress coffee gear, coffee candy, etc.) It is a nice way of switching up your content and giving us something we can watch over and over again for a good laugh, while also giving you guys the opportunity to take time for some more complex video ideas. Another Idea I’d love to see more of are technical deep dives like for example the nespresso vertuo breakdown or your understanding espresso series; something in that ballpark. Keep doing what you love and we‘ll be there with you all the way. Cheers!

I got a bullet roaster recently after using a Gene Cafe for about 15 years. The bullet roaster has a lot more versatility with varying heat levels and air speeds. It took quite a bit of searching to find good information on best roast methods and it seems there's quite a bit of poor information out there. I would love to see you work with a master roaster doing taste testing see your actual favorite roast methods, maybe specifically for home roasters? An ongoing series with different varietals, countries, altitudes, processing methods etc would be fascinating! (Check out Nicki Amouri SCA Roast Magazine summit 2022 YouTube)

I'm currently interested in the putative change of flavors in the cup based on differences between burr sizes, burr profiles (MP, LU, etc.), ... . Furthermore, the deviation of tasted characteristics based on the processing (e.g., honey, washed, natural). Additionally, I'd like to see more videos covering new grinders, machines, and such. But I'm happy with whatever content you upload.

A bit impractical but I'd love to see a series on what makes a good roaster. I regularly purchase beans from roasters across the US and Canada but without visiting them and seeing what equipment they use, the experience of the roast master, how they source, etc. I'm relying on their marketing material and word-of-mouth. I've had amazing coffees from small roasters located in rural areas, as well as big cities, but conversely I've had horrible bags from big-name roasters and mom-and-pop shops.

Regarding new videos: I'd be interested in an updated review/comparison of some of the newer and "high end" Hand grinders such the 1Zpresso Ultra, the stainless steel Commandante, and so forth. My wife recently brought home a bag from Black Sheep. It brewed really nice as espresso and the crema was glorious, but the flavour profile was a bit 1 dimensional with no acidity and hints of... something cardboardy. Would love to know what the 'robusta' flavour note is.

I’d like to see more on grinders for pourover and on burrs and burr alignment. To me it is fascinating how different grinders make the same coffee brewed the same way taste different. For example, my Fellow Ode with SSP Lab Sweet burrs makes coffee in which you can taste a variety of flavors. The same coffee in Lagom Casa just tastes like a delicious cup of coffee without the same differentiation in flavors. I only wish the Ode were as well made as the Casa …

I enjoy basically everything on the channel! And personally, I think of this patreon as supporting Hoffman and team, rather than any specific collection of videos. Whatever you do is going to be cool. I would personally love more history–coffee, espresso machines, coffee culture, I think it's all great. As long as you're doing fiction, perhaps we can get some epic mid-century fight between La Marzocco, Gaggia, and the Nouva Simonelli folks. Like, obviously, fighting over espresso machine brands is pointless, but I feel like you could strike a very fun balance of self-awareness, a bit of history, and probably some nice drama. ;) As far as gear - I think evolving the every couple of years grinder+machine comparisons at various price levels is honestly useful. And long term reports of your EG-1, Oscar, etc. After 3+ years I think are really valuable for the stuff you keep. As far as BTS stuff, I would love to see how both the studio's workflows have evolved, and how you see yourself in the world of coffee. I've got the jimseven on my shelf, so it's always been fun to see the long term evolution. This would be a different use of money, but I would love to see meets of a sort. Obviously, I expect they'd mostly be in London / the EU, but if you found the desire+ability to travel more, that'd be awesome.

The Beginner's Guide was a nice introduction, however it covers the basics of coffee grinders, in general. To clarify my suggestion, I was thinking more advanced topics, along the lines of questions such as: For grinders, flat vs conical and why? Why you might want other features? For pour over, cone vs flat bottom and which gives certain flavor profiles? For espresso machines, why volumetric or lever or dual boiler? etc. A decision tree with explanations, if you will. Either way, I enjoy your content!

I love your video - what does a great cup of coffee taste like. It is obvious the effort, originality and love you put into it. It would be very helpful if you would do a video on dialing-in for espresso machines with flow control, in my case an E61 machine. When dialing in, would you dial it in as if it did not have flow control, and then use flow control to change the extraction, or would you dial in a flow control profile I might like to use, like londinium or decline. Thanks for your efforts and impact on all things coffee.

Thinking of something that would be useful for people starting to dip their toes in to speciality coffee, would a guide to coffee origins be possible? Typical flavours of beans from Brazil/Colombia/Ethipia etc especially if you cover some lessen known/seen origins. I know there is inherent variability in this, but on a general level this combined with flavours to expect from different processing methods would be great

Well, nothing too crazy. Coming from the UK biscuit background I would say no American big soft cookies (Maryland's are fine as they're crunchy and small), no Jaffa cakes because 'cake' and those weird, christmassy biscuits that come in a knitting tin are out because noone really eats them. Ideally sticking to the likes of the digestives- chocolate, regular and caramel (bit of a stretch but the caramel can really work with medium roasts I find); rich tea; kitkats; blue ribbands; bourbons; custard cremes; Leibnitz if you're feeling fancy and I might suggest tea cakes, but frozen tea cakes as they provide a very satisfying chew without melting when hitting the coffee. You can tailor to your own preference and that of the team because the spectrum of biscuit taste is obviously a cavernous one, but it would be interesting I think.

Hi James, This is a bit of a long shot but would it be possible for you and team to look into the most environmentally friendly way of disposing of spent coffee grounds? Our central heating at home is partially run by a gasification furnace (basically a super efficient, solid fuel furnace) We burn all our coffee grounds from home brewing once dry in this along with seasoned timber. We also run a small coffee shop in our home town and we get through about 14-18kg of Redbrick a week (which normally gets sent to our local industrial compost facility), we have attempted a few times to dry the spent coffee grounds for the same purpose, but it has often gone mouldy before it has dried and even when it has dried, we’re never sure whether it’s endothermic properties might be cancelling out any good it’s doing? is it more environmentally friendly to just compost our coffee grounds instead?

Would love to learn about the state and future of the global coffee market (climate change, coffee rust, market forces, sustainability) and thoughts on when/why/how species other than arabica and robusta will be cultivated at a larger scale (and updates on whether/which species taste interesting and good). I think there was a short vid about another species a while back, but would love a larger overview which explains a lot of the context of coffee farming both now and in the near future. (Recommendations for roasters who are roasting different species would be cool, too!)

When I was in the market for a grinder upgrade, I had a hard time finding what I specifically wanted (a grinder mostly for pour over and cold brew - I don't need espresso grinds). I tried to infer based on your reviews, but since your reviews didn't specify talk about my needs I'm not sure I ended up choosing correctly.

One of my favorite parts of traveling is discovering crazy coffee concoctions in the local cafes, things I’ve just never even thought of. We’re all stuck in our bubbles of what “normal” is, so I think a video exploring some of the more unique preparations around the world would be a lot of fun

Have any videos been made to cover things that are down the rabbit hole like shower screens, flow profiling, automated WDT tools, brew by weight mods, custom portafilter screens, aligning burrs... freezing beans... the list is probably endless... I've seen many of your videos but not sure if missed some good ones that touch on this stuff. I've started watching Lance's videos for some of that though. Ha, even a parody video making fun of all this could be a good time!

Do you mean, not everyone has a digital level to obsess over a fraction of a degree?! Seriously though - you're right that it is an often overlooked issue in a lot of machines, especially those with splitters on the portafilter. I'd be interested to explore headspace a little more - I've seen a few experiments in the Decent Diaspora but not many other places.

I would like to see you go back to the how to videos. There are many on YouTube, but have missed some of the basics for good espresso. Some Ideas I have are: . Level your machine . Don't slam Portafilter That could loosen the puck . Dose for headspace not weight . Dry the Portafilter before dosing Water can fill the holes .especially the new deep extraction baskets & harm flow . Release the tamper slowly otherwise. suction could dislodge puck. . Clean water reservoir regularly . Flush group head after every shot . Small bowl to catch flushes rather than fill up the drip tray.
