I think the editors of the show on this episode tried to present that Sian and Junseo date are awkward throughout, for the reveal by the end of the episode that it went actually pretty well. As what Sian describes it, that she felt her real self and felt more of a real date with Junseo may seem an indication how comfortable she is or how she might've felt normal to allow whatever happened in bed. What caught my attention was when Sian was trying to explain why Theo is her top choice. She kept repeating how sincere Theo was as a reason. And for some that might be enough, but looking at the whole scene, Sian seems like trying to find other reasons but eventually only saying that he is sincere, made me think that, maybe Sian is not really interested to Theo but she is only being swayed because she felt secured. And the reason she is confuse are because of her choices. I think Sian knows Jeongsu is a big red flag but she is her type physically. Theo is sincere and unfortunately that may be it. Sian is not really attracted to Theo but between the big red flag and him, she is entertaining him. Junseo on the other hand, was a surprise option to her. She initially was not considering Junseo but when he expresses himself to her, she found another option. I think Sian just can't turn Theo down because she does not want to hurt him.
