I'm really excited for the new Monster Manual! Can't wait to see all the new critters, I'm loving the idea of an Owlbear with a 5 foot fly speed. To your point about templates, I'm actually going to be running some Owlbears with a Fungoid template from Dragonix's Deadly Denizen Volume 2, so yeah templates are really handy for increasing how many varieties of monsters you can make.
