I also get the feeling they waited until Yukimura finished the manga. I mentioned back in Season 2 that Yukimura skipped an entire arc between Arc 3 / Season 3 and Arc 4 / Season 4 because he didn’t want to write about a country he wasn’t able to visit and research. They probably want him involved in MAPPA’s writing or storyboard team so they can add new stuff we never got to see in the manga. Also, in Arc 3 he tried new things to appeal to younger readers that fans didn’t like. Maybe they’ll rework some of that too.

There is a chance that Vinland season 3 is in production. I don't know whether accounts on twitter farming likes or not, but this was trending on twitter today.
People are citing the source of this information as an interview with Yukimura (author of Vinland) given to french newspaper "Le Monde".
Unfortunately, the source here becomes the interviewer/reporter, not the author himself. Its not a direct confirmation. Usually Yukimura remains active on twitter and he directly participates in announcements.
So this is not an official confirmation.
I would say don't hold your breath, but if confirmation or announcement is going to happen it should happen within first half of this year itself.
The likelihood of it truly being in production? I feel rather optimistic about it. Le Monde although used word 'preparation' and not 'production' in it.
