I'm slightly younger than yourself, but am of the original trilogy generation. I disagree with your watch order however. ALWAYS start with the 1977 original and go through that trilogy, then do the prequels, Clone Wars, Rebels, Bad Batch, then into Andor and Rogue One. Then the other series and sequels afterwards. The reason being, that Andor is too grounded to be Star Wars imo, it does not give the tone of what the universe is supposed to be - though of course it does do dystopia very well. For a much more Star Wars vibe to this time period, Rebels is peerless - and it also tells of the building of the Rebel Alliance from another crew.
Don't get me wrong, there is much to love from this series; yet if I want to watch some Star Wars, generally this will be nearer the bottom of the list in terms of choices - same with R1 imho.
The great thing about the franchise however, is that there is choices galore for people and families of all ages, experiences and tastes; so I'm glad this series is available for those that love it.

My mom dropped me off at the theater in 1977 to see Star Wars IV New Hope. I remember excitement of people, the lines being long, and the cost of the tickets as $3 US instead of the normal $1.25. Over the years, I have never really been into Star Wars, much less a fanatic, but I do appreciate Star Wars and glad it exists.
My recommendation for people who have never watched Star Wars and want to, is to start with Andor first, then Rogue One, and then the original trilogy. Thus, my suggested SW start watch order:
1. Andor
2. Rogue One (2016)
3. IV. A New Hope (1977)
4. V. The Empire Strikes Back (1980)
5. VI. Return of the Jedi (1983)
