I think complaining about Luffy fighting this way is silly. He literally brought himself in there because he know he might now win and needed Katakuri off the ship. Why would Katakuri not just stop all of Luffy's attempts to slingshot himself like he has done with everything else Luffy does. Launching himself also means he is now on a predetermined very predictable path even without Katakuri seeing into the future which only makes it even easier to stop Luffy mid flight
