Generously salt and pepper brisket, heat smoker to 225F (preferably over wood and charcoal, I like rum barrel woodchips on a bullet smoker), once smoker is heated, add brisket. Cook to 160F, time varies by size of brisket. Wrap in butchers paper and continue cooking to 200F.
