This kind of knowledge is so valuable because often there are uncontrolled variables (like elevation from sea level) that affect a process and so re-establishing what appears to be “settled science” for recipes or manufacturing processes can actually make perfect sense. Especially when you get unexpected results by following directions meticulously.
