You have total control over the character. If you made a kind choice at the beginning, then at the end of the dialogue you can also choose bitchiness choice. It may not look very logical, but it's your choice. And yes, all choices affect the game. Especially dialogues. You may not notice this since I tried to make the changes as seamless as possible.
