House Special Fried Rice

The main difference is that in this version, I fry the egg and slide it out of the pan before frying the remaining aromatics and finally the rice, adding everything back together at the end.

given that you go to such great lengths to make sure that there's as little water as possible in your fried rice, to the point where you generally avoid adding any sauces, do you find that the still-frozen peas counteract that at all?
