A New Carnitas Video!
Added 2023-11-27 14:41:16 +0000 UTC
I have some older existing videos for carnitas on my Youtube channel already, but here is another I shot while making some last week. I made these into tacos with cranberry sauce from Thanksgiving, as the flavors I use in my cranberry sauce and carnitas are very similar (orange and cinnamon).
Here is my recipe from Serious Eats: https://www.seriouseats.com/no-waste-tacos-de-carnitas-with-salsa-verde-recipe
The fat came from the carnitas - nothing added!

Yup, and there's a video variation of it as well: https://www.youtube.com/watch?v=GNaTZCoqplE

I was recording someone else's podcast when I recorded this video, but I do indeed have a new podcast coming out with my friend Deb Perelman of Smitten Kitchen. It's called The Recipe, and it's about the process of developing and testing recipes. It'll be out early next year. actual date TBD.

"Navel" oranges, like a bellybutton, I think because of the way you can see budding segments like a bellybutton from the bottom of some of them.

At about 7m10s you mentioned recording a podcast - would that be a podcast of your own, or were you a guest on someone else's pod?
(I faintly recall that you were planning on releasing a podcast starting this month, and I am looking forward to that!)

Send Mike something is missing from this video. Where did ask the fast in the iron pan come from? What’s with the serving pan on the stove? Label me confused.

Cranberries are magical. I also think cranberries are to fall & winter what rhubarb is to spring & summer. That tart little treat that when done right makes everything better. Sweet or savory!
