Much like Sonic, there are distinct 2D Zeldas and 3D Zeldas (although a couple blur the line, like the Link's Awakening remake). For 2D Zelda, I think most people would agree Link to the Past (the third game, first 16-bit one) is the best starting point if you want to jump in and start immediately enjoying a blind play. The first two Zelda games want you to earn your fun with a lot of trial and error and note taking, and there's very little plot. The 2D ones after that tend to assume you already played Link to the Past and learned how some game systems work from it. I don't have any strong 3D Zelda opinions.

The HD version cell shading doesn't quite have the same look as the original but there are a few key QOL improvements that makes it a better overall experience. You should absolutely play at least one Zelda game at some point. Ocarina of Time is always my recommendation for a first experience when anyone is even remotely interested in playing Zelda. Even now people are still hoping Nintendo does a 1:1 remake for the Switch era eventually, but I think some things should be left alone.
