Comments
I couldn't make anything out either but your comments confirm a lot of what I thought as well. Thank you for this excellent breakdown, my friend!

Where are you watching? You generally have to watch on a computer to see the One Ship episodes. You won't see them on most smart TVs or smart phone / tablet devices. From a computer screen, though, you must be watching a Season 6 episode. In the overlay menu that appears when you move the mouse over the playing or paused video, click on "X-Ray," then "Bonus Content." You should see the videos show up there. I don't believe the content is blocked in Canada or any other country, it's just a matter of what device you're viewing on.

For what it's worth, I blew up the "Medical Self Diagnostics Report" that Chrisjen looked at. I don't know how seriously we are to take this info -- common wisdom among Screaming Firehawks is that every display, every monitor in this show contains useful information that you should pay attention to, but given that this is from bonus content, I don't know how much this stuff was scrutinized by the Powers that Be. In fact, there's one fairly glaring error that's immediately obvious -- in the upper right corner it shows the patient's name, which appears as "CHRISJEN, A" ... looks like whoever created that graphic got Chrisjen's first and last names swapped.
That said, the four bars reveal medical stats that, at least by my (non trained, google- and wikipedia-informed) standards look a bit concerning, but generally not alarmingly so. Her resting heart rate is listed as 82 bpm, which is fairly normal from what I read, even though the display says "Elevated." Her Oxygen Saturation level is 92%, which is on the low end of normal, I believe (and is not flagged as being abnormal in the display, though the bar *does* appear in red). Her Cortisol level is 32 µg/dL, which is quite high, but Cortisol levels apparently vary quite a bit over the course of a day, so this could be just a transient thing, a response to a stressful situation. And her blood pressure is 134/100, which indicates hypertension (particularly the diastolic number, which puts her in the "Stage 2 hypertension" category according to most recommendations).
There is other info on the screen, but most of it is too blurry to read. By my understanding, the only really dangerous number is the diastolic (second number) blood pressure. The only other readable info on the screen is the message "Results: Rest Recommended" which appears to be repeated below (in a very blurry section) that adds the word IMMEDIATE (in all caps) in front of "rest recommended." Anyway, the medication Chrisjen "discussed" with her doctor might have been something as simple as a Beta Blocker or some other stuff designed to bring her BP down.
I believe the books (been a while since I read them) go into a bit more detail on Avasarala's maladies, but I think mainly she's just an aging person in a very stressful job, which takes the toll you would expect. I think. Perhaps others with more medical training can comment further.
