The isolated supply looks like it's a hack, not sure why you'd need one in a hotplate that used a triac-based controller, unless it's just providing a different power rail for a later revision (like they moved from 5V parts to 3.3V parts or something). I'd suggest figuring out a way to fix it in place as well...
As for your desoldering technique, it's ugly but it works ;) Sometimes clipping the part then pulling the leads out one at a time is just easier. Protip: Solder Wick is your friend.
Oh, another thing too, it's frequently easier to desolder stuff if you apply extra solder to the joint first, gets some fresh flux into the mix.
