I really hope everybody gets a chance to try this recipe because it is really tasty! I have already received a few requests for different types of corn side dishes, so I will definitely be circling back around to play around with different flavors.
One particular recipe I will be trying is some sort of Mexican street corn (elote) bowl! What are some other types of corn variations you'd like to see?

The timing of this recipe is pretty good because I think it would go great with the Chicken Fajita Casserole that I posted yesterday.

So I was right in the middle of making this and realized I didn't have sour cream 😬. I took a gamble and used some cottage cheese, turned out pretty tasty.
