It's worth noting that the servants hide their identities to avoid revealing any weaknesses (or strengths). As an example, if Escanor from 7DS was a servant, the obvious time to try and take him down would be at night and avoid him during the day, but you can only exploit that weakness if you know about it. That said, very few servants have weaknesses that are that glaring

Also knowing the name of a hero doesn’t only involve chivalry, knowing the name of a Servant really helps knowing the strength and weaknesses of someone that’s why is so important to figure them out (Irisviel, the woman in white, stated during episode 4 that knowing the name of lancer should help saber figure out what lance should she look out for for example)
