The extended editions give you extra scenes and background info on a lot of characters. Definitely worth splitting up into 2 parts if you have to. Plus whoever watches part 1 will have to watch part 2... more views ;) Also the elves you saw in the woods are the people of Legolas the elf in our group the one who shoots a bow like a savage.

The reason Frodo left was because of what Galadriel the lady in white said about how the ring will affect everyone which will cause the fellowship to fall apart, and in a way Boromir's attempt to take the ring by force sealed the deal for him.
