Man, so many cool developments over the past few episodes.
One thing that stood out to me the first time round was seeing Doffy's reactions. For as cool and calculated as he usually is, when something truly angers him or something surprising happens that he didn't fully account/plan/have a backup plan for, he loses it a little bit and will react and attack without thinking. Like attacking Fujitora was completely unplanned. If he did successfully take him out in that instance, what would have happened? The fallout would've been unprecedented. They would have sent the other admirals and possibly whole navy fleet after him. And since he did attack, they are now both at odds with each other and their true intentions have been laid out. But then again, maybe that was also his plan all along? xD
Fujitora is an absolute boss. By far my favourite admiral and joint first Navy character overall. Man is the GOAT. His morals, ideals and personality are all in the right place.
He is like an older, stronger and more experienced version of Smoker. Smoker is great, don't get me wrong, but he is still a bit of a greenhorn. He lacks 'true' power and is also very much still learning how terrifyingly brutal and shady the world is. Fujitora has got that experience and will always prioritise civilians safety over all else.
One last thing, I think you underestimate how rare it is for someone to have Conqueror's haki. Everyone is born with minute levels of haki, if they train long enough they can develop these into either Observation or Armament haki (or both). But Conqueror's haki is different. You need to be born with it. It is completely dependant on how strong your will is and how strong your King/Queen-like qualities are. It's only found in the greatest of characters who are unshakenly determined to fulfil their goals. 1 in a million. And to be fair we have been show a bunch of people who can/have used it before but that's because we're the viewers and it's integral to the story to see them in action. To give you a better understanding, the admirals can't even use it and look how powerful they are. So the fact that old coot Chinjao randomly had it is mind blowing.
