There's a number of thematic reasons behind the fishmen choosing the sun as their symbol, but one somewhat obscure reason is that the men closest to him (Jinbe, Arlong, etc.) often address Fisher Tiger as "Tai no aniki" or "Brother Tai".
"Tai" is a shortening of his name "Tiger", however "Tai" can also refer to the word "Taiyo" meaning "sun" in Japanese. My understanding of Japanese is extremely amateur, but I'm pretty confident that this is one of the several meanings behind their crew's name and flag.

This arc is one of the most underrated in OP along with Skypeia. I think it’s mostly because of the villains, whether it’s character design or personality traits or a combination of the two. People are not seeing the complexities of the story and even if they did they are certainly not understanding the severity of it. There’s a specific scene of this arc that gave me chills the first time I saw it, I wonder if it’ll do the same for you 🤔. Or at least get you to acknowledge it lol.
