There's actually a connection between the OG series and the Rebuilds. It's subtle, but there's implications. They're not necessary to watch along with the OG series, but if you want the whole EVA experience then I'd recommend it.

After the series, watch End of Evangelion in quick succession. How much it connects to the final two episodes of the series is up to interpretation, but EoE is a must watch in one sitting. The Rebuilds are neat (fantastic animation and music) but best considered an entirely different thing, more of a "reimagining" than a remake, totally separate from the original series + EoE. Death(True) can be skipped though, its basically a clip show.

Since your watching the main series end of evangelion for sure then start the rebuilds if you want

Unironically watch all of the aboves, excluding the very last one. You genuinely will not be done with the Evangelion stuff until you've watched all of those bad boys. You will risk getting spoiled on stuff if you just drop the thing after the final episode (or even End of Evangelion, the true finale of the original product).
