I've considered having a discord server just in general, I'm a bit nervous about doing an open-to-the-public server, but I MIGHT do one for my patreon as a whole eventually. We will see...

Agreed with Roizenacht, start small first. I would say make it patrons only at the start, so you can have a more manageable server at the beginning with people that support you. During that time you could set up a couple of other things like trustworthy moderators so they too can help manage the server as well while you are working on other things or away with business.
