An additional factor is probably cost. Proper battle droids are actually very expensive and the only reason the separatists managed to fund an army in the first place, is that the standard b1 battle droid, which curtis so lovingly dubbed aardvark, is incredibly flimsily built. As we've only seen recently, most proper battle droids, like the assasin droids on that scavanger's ship, can take several hits and still keep fighting no problem, yet the standard b1 unit is destroyed by a single shot. They also tended to not include any individual processing units, making them not very smart and requiring someone else to give them orders. That means if you wanted to have an army of proper droids fighting for you, instead of the mass produced junk the separatists were using, which palpatine no doubt would have wanted, it's actually cheaper to just train regular people, who also tend to be much smarter fighters. Droids are really only useful if you're obscenely rich or absolutely need the additional numbers and can't get them from anywhere else.

I burst out laughing when you mentioned how Viceroy Gunray was acting like Schultz. Very funny comparison. In answer to your question, the reason that the republic does not use battle droids is due to a multitude of reasons. The most significant is that Palpatine knows that droids cannot be influenced by the living force and a system that recruits soldiers from the populace into stormtroopers will make it much easier to bind everyone under the imperial banner; conventional battle droids utilized by a hostile force imposing its will can make it so that people under the republic avoid relying on droids to keep order. In the sense of why people who believe they have any say in the matter, clones can adapt to situations, employ tactics and strategy, whereas the droids, and this is the reason they don't just have an army of droidekas, are so numerous that they can sometimes overwhelm enemies in sheer numbers. The worldbuilding in Star Wars is not ideal, and feel free to correct me if I got anything wrong here but uh this is how I understood the decisions that were made.

Toriyama, Dragonball's creator is actually a big Star Wars fan as well, he's actually published some fan art he's made of the series before including ones of Anakin and our little battle droid friends lol. You can see little references to the series a lot in his works, like R2-D2 and C-3PO are in the background of a scene in early Dragonball's manga, it's the designs and machines he really likes apparently, which makes sense if you've seen some of his other series and art.

Regarding Ahsoka's bad cop good cop attempt. The Jedi order are kind of like monks, they aspire to still their emotions and deal with situations in a rational and detached manor and basically achieve enlightenment through the force. Thus threats of violence and even the appearance of losing control of their emotions are frowned upon. Granted, few Jedi actually accomplish this, but it's the ideal they are supposed to strive for. Sith are the exact opposite, they draw power through extreme emotions. and not even just negative ones, love is actually encouraged by some Sith as its a powerful emotion. When the Sith were more numerous it was pretty common for them to have lovers/spouses unlike the Jedi.
