Old Gods = The Weirwood tree Gods. The Children of the Forest and First Men worshipped them. Still practiced in the North. New Gods = The Faith of the Seven. Seven Gods with distinct personalities (The Father, The Mother, The Warrior, The Smith, The Maiden, The Crone, The Stranger). This is the official religion of the Seven Kingdoms. Think of The High Septon as the Pope, and septons and septas as preists and nuns. There are other religions, like the Lord of Light which is mostly practiced in Essos, and The Drowned God, which is practiced in the Iron Islands.
