This is the only show I can think of that I quit watching and later came back and binged. I made it to like episode 6 the first time I gave up on Steins;Gate and when I gave it another shot it only took a few episodes for me to hit a point where I just binged until the end.

As opposed to "shounen" which is more oriented towards young boys and teens (DBZ, Naruto, etc), seinen is generally more mature. It's still pretty broad but there's tons of great seinen out there.
