2024-01-27 22:51:41 +0000 UTCUmm actually the Maillard reaction is the creation of melanoidins due to the interaction of amino acids and sugars as the sugars are reduced in the temperature range of 140-165 Celsius. At higher temperatures, sugars undergo their own process, (similar but different results) of carmelization. So both a marshmallow and (elements of) a steak could undergo both reactions, depending on the presence of amino acids, sugars, and the temperature range.
