I like doing cleans but i only train 1-2 a week therefore I need to be careful with the intensity or else I get injured to too sore :/

I think what he means as “fun” is that majority of people getting into Olympic lifting for that purpose will eventually not have fun. If you think about it, if your serious enough to get into an online or in person coach but have to explain you can only train 3x a week they will work with it but do not push the blame on the coaches if you are not progressing.

Sika's main flagship program for WLs is 4x a week, have you seen it? Wonder on your thoughts
I guess an option is to make the microcycles shorter than a 7 day week
Also fun is subjective, my progress has been "stalling" at times but I find snatching (1rms, 50%) fun regardless. Just the act of doing those lifts are fun to me. (Obv would prefer PRs, but IMO PRs are amaaazing to me and any lifting is just "fun")
There are people who can eat the same meals every day and still enjoy them, I guess I am the lifting version of that
