One would assume that having built the Dauntless, they wouldn't take AS long to build a second one, and even if the second craft is still in spacedock, the crew and ships compliment would be undergoing training to be ready to ship out once the vessel is done and maiden flight is complete. (edit we should really make a Patreon discord for some of these discussions)

Granted that includes time to develop all the tech to get things into orbit and the Undaunted have been sending tech back with all the Lance ships, it still would take a year+ to build another. I'd say we're close but not that close to having a second Dauntless class
