Confronting Saffron was needed to show she didn’t beat them, but also, they needed to get the shuttle back

This was one of Christina Hendricks' earliest roles from when she first started acting. You've already seen her in an even earlier role on "Angel", where she appeared in a single scene during a flashback to when when Darla turned Liam into a vampire.
The "Previously on..." from the LAST episode included a scene from this one, as a legacy of all of the topsy-turvy airing problems during the original run.
As a point of fact, Saffron's speech from "the bible" is original to this episode and doesn't come from any real religious text. It's a semi-serious debate in some areas of the fandom as to whether THE CHARACTER is making it up, or if the show is saying that there's a new bible that was written in the future.

I don't think that Inara and Zoe distrusted Saffron from the beginning.
Instead, Inara's initial dislike of Saffron was simply due to jealousy.
Zoe, on the other hand, disliked Saffron due to resentment. Saffron was the stereotypical perfect wife -- submissive to her husband in all things. That's pretty much the opposite of Zoe. Seeing the reactions of Mal, and especially of her husband, to Saffron being the dutiful little woman in the kitchen fueled her resentment.
As for Wash's reaction, yes, of course he found Saffron attractive. He has a working libido, after all. However, he's also VERY in love with Zoe and absolutely would never cheat on her.
One last thing: People often miss Saffron's statement near the end when she says, "You're assuming the payoff is the point." She's not in it for the money; she's in it for the thrill of carrying out the con.
