Saber being able to sense where Assassin was going to strike with his swallow reversal is a skill she has called Instinct. It's never really touched upon in UBW or Zero, but every servant has their own sets of skills to boost their strengths or cover their weaknesses. Every servant in the visual novel has their own stats page with their abilities and skills, though I don't recommend looking them up until you're done with the series lol

He's just so skilled at swordsmanship (stated to be the best swordsman in the 5th Holy Grail War, surpassing even Saber herself) that he managed to develop a technique on par with one lol. Basically, he got bored so he learned how to break reality.

You didn't really talk about this, but this is an episode where most people hate on Shirou for being so stupidly stubborn towards Archer. Like, saying to let him fight and not protect him in the Caster fight. Basically, in the VN, its clear Shirou would rather die than see someone else die, so that is why he is objecting so unreasonably to Archer's help. Just wanted to explain that since the show doesn't.
