No multiverse, just Watcher saying this universe is in peril if a seed is destroyed, the seed is in a room that is booby trapped, and Groot is walking to go get the seed and setting off all the traps while The Watcher is narrating it.
You only see The Watcher outlined in shadows like he is in What If, but there isnt like a live action full body Watcher anywhere
