I don't think he's ever given a direct reason why he changed it, but my personal belief is that he realised exact what types of things he was going to need this guy to be able to cut and went "Okay; explaining that this guy can earthbend sections of the floor because "Crab" is too ridiculous even for me; but I still like the idea of drawing scissor hands, so magical cutting fruit it is then!"
