So they will likely continue to have the same manerisms, but events in your past that shaped you into a kind person will not affect your zombie's personality, instead it will only have the memories of a zombie following his master's ruthless orders. So Brook's zombie is like if brook, with the same personality (likes panties and laughs in that perculiar way) never spent time as a cheerful musician for a crew and has only been a ruthless soldier for the last 5 years.
