Uncle Iroh was the crowned prince. So he has the hair ornament. His brother became firelord but I think the ornament stayed with him. Also Suzan thought war will bring the world under one rule and spread prosperity but later generations forgot the real cause behind his ambition. After the destruction of air temples, war turned as a means to destruct other nations to establish their superiority.

Also, I don't know if this is confirmed or just speculation; but I was actually told that Iroh's silent treatment of Zuko wasn't originally planned. Rather, because of Makos death (the previous Voice Actor of Iroh) they opted to having him stay silent for the start of the season to let more time pass, meaning when they introduced the new voice actor in this episode, it doesn't' come as much of a shock to the system, simply becuase of the amount of time between hearing him speak.
Like I said; I honestly don't know it's that story is true or not; but if it is, it's honestly rather fascinating how sometimes the real world can make some of the most impactful additions to a story; Iroh's silent treatment the whole time has said far more to Zuko then any words ever could.

As for Sozin though, you're right; in his own way, he really did think that what he was doing was a good thing. He wasn't trying to rule the world just because he could; he legitimately believed that the world would be a better place for everyone if they adopted the Fire Nation way of life, so he felt like it was an obligation to expand to all nations, because he was the only one that had the ability to do so.
And regarding the volcano; as Krowft said; they weren't just fighting it for the sake of it. The reason Sozin came to help is that it did actually take both of them together to make sure that all the civilians on the island could actually get to safety. He went to help because despite it all; he was a legitimately good Firelord that cares about his people; but similar to Zuko at the end of last season; when he was suddenly given the option to pick between the right thing and the selfish thing; he choose the later. And while it wasn't said in the ep; if you do look at the expanded materials; it does show that at the end of his life, Sozin did regret that everything he's done, the people he hurt and betrayed only ended up causing more harm to the world then the good he was hoping for; but he also realised he was too old and didn't have enough time to truly fix any of the damage he did.
(That said; similar to how I've been talking in a few other places about how LoK ruined the series for me permanently; the way Sozin is written in the expanded material is just one more thing that retroactively makes me dislike this show. Without getting into the specifics; in expanded material, at some point they realised they'd accidentally ended up making Sozin a little bit *too* likable for their own taste, and instead of sucking it up and continuing to write him as a morally ambiguous character, they went all "Oh wait; he's actually a horrible guy all along! See! Look at him!!! Look at how awful a person he is!!!" which just reinforces how much I don't like the head writers in this series, and makes an episode like this one go from being good to just making me feel sick because I can't get out of my mind that the same crew that made this also approved that trash and... eugh....)

Dont know if you noticed but Roku's love interest has a similar face structure to aang, it's said that the avatars next cycle will take resemblance of the last avatars love interest. Cant remember if it is canon to the story or made up by the fandom but it makes sense.

The destruction from a volcano spreads for many miles and miles, and the toxic gasses and ash can spread faster than a Tsunami.
If Roku didn't stay behind to fight the volcano there is literally zero chance any of those villagers would have got away with their lives, the ash and fumes and heat would have caught up to them at sea.

Fun fact: The earth bender in the intro when they say 'Earth' is this earth bending teacher of Roku. Initially that character was a design for Toph.
