12/29 Livestream Bake-Along Supply list!

Hello! Wanted to give you a list of things to have on hand for next Sunday's livestream! I'm planning on getting started at about 10:00 AM PST on the 29th, but will firm that up with you the closer we get! I am REALLY looking forward to this! :D

Gingerbread cookie ingredients:
3/4 cup unsalted butter (Room temp soft)(I'm experimenting with plant based butter, but use whatever you like)
3/4 cup brown sugar, packed
3/4 cup Grandmas's molasses (Not in photo, because I need to restock ;)
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons ground ginger
1/4 teaspoon allspice or cloves
1 large egg
3 3/4 cups All-Purpose Flour


Royal icing ingredients: (Recipe not pictured)
3 egg whites
4 cups confectioners sugar




Decorating supply list:
Variety of piping tips (See picture for what I'm using)
Piping bags, couplers
Parchment paper
A few scraps of cardboard (to prop up gingerbread man)
Fine point paint brushes 
Sugar sifter 
Aluminum foil 
Modeling chocolate


Baking supply list:
Two baking sheets (have one large and one medium size on hand)
Several sheets of card-stock paper (Think postcard material)
Pencil and eraser
Craft exacto knife with extra blades
Large cutting surface (Could be butcher block, good size cutting board etc)
Paper towels 
Cling wrap or cellophane 
Rolling pin
Measuring Cups and measuring spoon set

Mixing bowls
Spatulas
A variety of food colors (These don't need to be quantities pictured... I buy in bulk. Food colors bought at the grocery also work, but picking up some true black food coloring from a baking supply store would be a good idea!)

Either a hand held mixer or counter top mixer (If you don't have either you can mix by hand, it just takes longer. There are inexpensive hand mixers at Walmart that will do the job for around $25 (That's what I used when I very first started baking :D

Does anyone know of any candy melts that don't have palm products in them? Thanks!

i use earth balance plant "butter" in a cake a few days ago and it is fine. I bake with margarine as my preference to be honest in everything. I have never noticed a difference other than it being a consistency when baked that I like better. I prefer it in icing as well but it is much softer than using butter I found. I am not sure how well it will work in royal icing

so I wasnt able to find modelling chocolate but the recipe from Christine's book is 2 cups candy melts chips and 2 tablespoons light corn syrup. You want to get candy melts vs choc vs chocolate chips.heat to 110 degrees, and stir until it forms a ball. Seal tightly until cooled then break off what you need. I got the candy melts from amazon in black and white.

Oh and for large gingerbread men I generally bake for 4 minutes at 180 c then turn and bake for another 4 minutes but just keep an eye on them

Ok so ingredients: 1 1/2 cups icing sugar 1 cup dairy free margarine/baking spread (I use stork) 1/4 non dairy milk 1tsp vanilla 1tsp cinnamon 1tsp mixed spice 2tsp ginger 2 1/2 cups plain flour 2 tbsp cornstarch 1 tsp baking soda 1tsp cream of tartar Beat together spread, sugar, milk and vanilla Mix in the dry ingredients Chill overnight or for 2-3 hours at least I'm going to be making my dough ahead of time because it's much easier to work with if it's chilled overnight because it's very soft. I think I'll leave out the baking soda if there's none in Christine's recipe just to make sure it doesn't puff up too much. I might also ad a couple of tbsp of treacle for colour because my cookies are quite pale in colour if you want to do that I would advise adding it before during the first step.

I can send you my gingerbread recipe tomorrow when I get into work 😁 it's a super simple recipe and I've used it to make simple gingerbread houses so it should work fine, I might leave out the baking soda tho so it doesn't puff up too much.

Just made cookies using this recipie and the texture isn't very good...its actually quite dense. And the ginherbread flavor doesn't pack a punch the way I like...how can I fix this?

I am also a pastry chef!!! YAY. and its the molasses itself Im allergic to. Ginger, nutmeg, allspice etc im all fine with all of those. Yeah I have weird allergies... molasses, dill and cephlapods lol

Does anyone know any good alternatives for us vegans? I plan to use earth balance butter which is plant based but not sure if flaxseed meal and water will suffice for an egg replacement for this project?

what is it you're allergic to? I'm a pastry chef who specialized in 'allergen-free' baking for a while and maybe I can help you out? I've honestly never heard of someone allergic to molasses and I'm intrigued to see if I can help you find substitutions! xo

I am excited to watch this ! :) I did have a question though for follow along, for someone who is allergic to Grandmas molasses but loves the taste, what are some substitutions (even faux flavorings) that one could use in lieu of molasses to get a similar earthy distinct taste that molasses gives?
