So I just looked up the word count for Fate/Stay Night and including all three routes, it’s 820,595 words or 3,850,000 Japanese characters. It is a bit hefty to say the least lol

It's been a while since I read the visual novel for Fate/Stay Night, but a reason for the focus on atmosphere could come from Kinoko Nasu's prose (the original author). He also loves playing with furigana (a second word written on top of the original word that has the same pronunciation) so a lot of his writing has different interpretations of the same words, which makes it really hard to translate well. I think the main problem with this adaptation is that we lose all of the prose and internal thoughts of Emiya throughout the story, which makes some of his decisions a bit confusing without the proper context.

So about the whole "big brother" thing in anime, in Japanese, younger siblings don't call their older siblings by their names. Instead, you would call them either "oniisan" big brother, or "oneesan" big sister. It's similar to why Sakura doesn't call Emiya by his name but rather "senpai" which is your senior. It's a concept that doesn't really work well in english so it does sound a bit wonky. Also in anime, little girls sometimes call older guys "oniichan" which is what Illya did. The "chan" is basically the cute version of "san" so calling someone you're not related to "oniichan" is pretty much just a way of being cute.
