How long does it take to shoot each episode of escape the kitchen? What does the other contestant do while the other is in the kitchen?

Also how do you keep track of points and how do you decide what should count towards getting points like washing hands, swearing, etc? Is someone actually sitting there and counting how many times a contestant swears haha
